Raspberry Chipotle Black Bean Dip

Ingredients
  

  • 1/2 onion diced
  • 1 can black beans rinsed
  • 1 tbsp cumin
  • 1/2 tbsp salt
  • 1/2 tbsp pepper
  • 8 oz cream cheese
  • 1 clove garlic minced
  • 4 oz monterey jack cheese
  • 1/2 bottle roasted raspberry chipotle sauce

Instructions
 

  • Preheat oven to 400 degrees
  • Dice white onion and set aside
  • In a cast iron skillet, cook rinsed black beans with cumin, salt, and pepper
  • Remove beans from pan and cook diced onion on medium heat
  • Halfway through cooking the onion, add minced garlic and cook till golden brown
  • In a medium mixing bowl, combine cream cheese with onion and garlic.
  • In the skillet, push black beans to the side of the pan and place cream cheese mixture to the center.
  • Add the raspberry chipotle sauce on top.
  • Lastly, sprinkle Monterey Jack cheese on top
  • Place skillet in oven for 15 minutes on 400 degrees
  • Stir the dip and serve with your favorite chips!
