A Cowboy’s Recipe Guide to Cinco de Mayo

While originally created to honor a regional Mexican military battle, Cinco de Mayo has now become a significant celebration of Mexican culture in the United States. To help you throw the ultimate Cinco de Mayo party, we’ve gathered a collection of our favorite recipes— and we made it cowboy style!

Ingredients
  

  • 1 lb chorizo sausage
  • 1 (10 oz) can Rotel tomatoes with green chilies
  • 1 cup pepper jack cheese grated
  • 16 oz Velveeta cheese
  • 1/2 cup milk
  • 1 cup black beans drained and rinsed
  • 1 cup corn fresh, can or frozen
  • 1/4 cup cilantro minced
  • 2 tbsp lime juice fresh squeezed
  • 1 Avocado sliced
  • Ground cayenne pepper optional

Instructions
 

  • Add the chorizo to a large skillet over medium to medium high heat. Cook until the sausage is no longer raw, breaking it up with a wooden spoon or spatula. Donʼt add oil to the skillet.
  • When the chorizo is finished cooking, drain any excess grease then dab the sausage with paper towels.
  • Lower the heat to medium-low then fold in the tomatoes, both cheeses and milk. Stir until blended.
  • After the cheeses are blended, gently fold in the black beans, corn, cilantro and lime juice. Continue cooking 2-3 minutes until everything is warm.
  • Add a pinch of ground cayenne pepper to taste.
  • Use black beans, corn, a sprinkle of cilantro and sliced avocado for garnish.
  • Serve warm with tortilla chips.

Ingredients
  

  • 1 cup pimento cheese check our page for the full recipe
  • 2 cups shredded rotisserie chicken
  • 1/2 tbsp Greek seasoning
  • 1 dozen small jalapeños
  • 1 pack thin sliced bacon

Instructions
 

  • In a mixing bowl, add in a cup of pimento cheese
  • Add in shredded rotisserie chicken and greek seasoning then combine.
  • Take a dozen small jalapeños and slice down the middle leaving the stems on.
  • Scoop out seeds and set aside.
  • Take about a spoonful of cheese mixture and place in the jalapeño. Repeat until you have no more mixture.
  • Take a slice of bacon and wrap around jalapeño and secure with a toothpick. Sprinkle some extra greek seasoning for taste.
  • Add poppers to and air fryer for 10-12 minutes until crispy.
  • Serve and enjoy!

Ingredients
  

  • 12 corn tortillas quartered or cut into 6 wedges
  • Corn oil or other neutral oil for frying
  • Kosher salt
  • 1 1/2-2 cups red chile sauce or salsa verde,
  • Sprigs of epazote optional

Garnishes

  • Cotija cheese or queso fresco
  • Crema Mexicana or creme fraiche
  • Cilantro chopped
  • 1 red onion chopped
  • Avocado sliced or roughly chopped

Instructions
 

Tortillas

  • In a large sauté pan, coat pan generously with corn oil, (1/8 inch), heat on medium high to high.
  • When the oil is hot, add tortillas. Fry until golden brown.
  • Remove tortillas to a paper towel lined plate to soak up excess oil. Sprinkle salt on the tortillas.
  • Wipe pan clean of any browned bits of tortillas.

Salsa

  • Add 2 tbsp of oil to pan, bring to high heat again. Add the salsa and let salsa cook for several minutes. Add a few sprigs of epazote (optional).
  • Add the fried tortilla quarters to the salsa. Gently turn over the pieces of tortilla until they are all well coated with salsa. Let cook for a few minutes more.
  • Remove from heat. Serve chilaquiles with garnishes and fried eggs and beans or nopalitos.
