Ingredients
- 2 (8 oz) pkgs cream cheese softened
- 1/2 cup white sugar
- 1/2 tsp vanilla extract
- 2 eggs
- 1 prepared graham cracker crust
- 1/2 cup pumpkin puree
- 1/2 tsp ground cinnamon
- 1 pinch ground cloves
- 1 pinch ground nutmeg
- 1/2 cup frozen whipped topping thawed
Instructions
- Preheat oven to 325 degrees F.
- In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth.
- Blend in eggs one at a time.
- Remove 1 cup of batter and spread into bottom of crust; set aside.
- Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended.
- Carefully spread over the batter in the crust.
- Bake in preheated oven for 35 to 40 minutes, or until center is almost set.
- Allow to cool, then refrigerate for 3 hours or overnight.
- Cover with whipped topping before serving.

2. Southern Baked Mac & Cheese
Southern Baked Mac & Cheese
Ingredients
- 10 oz gluten-free elbow pasta gluten-free penne pasta can also be used
- 1/4 cup butter optional
- 1 1/4 tsp salt
- 3/4 tsp mustard powder
- 4 cups milk
- 1/4 cup cornstarch
- 4 cups shredded cheese, divided any variety of cheese can be used
Toppings
- 2 gluten-free bread slices, toasted and broken into crumbs optional
- 1 tsp butter, softened optional
- 1/2 tsp paprika optional
Instructions
- Preheat oven to 375 degrees F. Grease a 9x13-inch baking dish.
- Bring large pot of lightly salted water to a boil. Cook macaroni in the boiling water, stirring occasionally until cooked through, but firm to the bite. About 8 minutes. Drain.
- Melt butter in a saucepan over medium heat. Stir salt and mustard powder into melted butter and remove saucepan from heat.
- Whisk milk and cornstarch together in a bowl until smooth. Stir into butter mixture until well blended. Return saucepan to stove and cook milk mixture, stirring constantly, over medium heat until sauce is thickened. About 5 minutes. Remove saucepan from heat.
- Stir 3 cups of desired cheese into sauce until heat from sauce melts cheese. Add pasta to cheese sauce and stir well. Pour into the prepared baking dish.
- Combine remaining 1 cup of cheese, gluten-free bread crumbs, 1 tsp butter, and paprika in a bowl. Sprinkle over pasta mixture.
- Bake in the preheated oven until top is crunchy, about 30 minutes.

Ingredients
- 2 lbs ground beef
- 1 tbsp vegetable oil
- 1 large onion chopped
- 1 Green bell pepper chopped
- 1 Jalapeno pepper ribs and seeds removed, chopped
- 4 Garlic cloves minced
- 2 tbsp chili powder
- 1 tbsp paprika
- 1 tbsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp freshly ground black pepper
- 1/2 tsp Kosher salt
- 1 (8 oz) can tomato sauce
- 1 (10 oz) can diced tomatoes & green chilies undrained
- 1 cup beer
- 1/2 (2 oz) cup shredded reduced-fat sharp cheddar cheese
Optional Toppings
- Sour cream
- Sliced green onions
- Shredded cheddar cheese
Instructions
- Heat a large Dutch oven over medium-high heat and add oil.
- Lower heat to medium, add onion, bell pepper and jalapeño pepper. Stir occasionally until tender, approximately 4-7 minutes. Add garlic and cook for an additional 1 minute.
- Add ground beef. Cook for 8-10 minutes, breaking beef into small crumbles and stirring occasionally. Pour off drippings, as necessary.
- Add chili powder, paprika, cumin, oregano, black pepper and salt. Cook 1 minute.
- Add tomato sauce, diced tomatoes & green chilies, and beer. Bring to a boil.
- Reduce heat to low, cover and cook 30 minutes.
- Add shredded cheese.
- Serve with your favorite toppings.
